The Levoni heritage
Levoni company was founded in 1911 by Ezechiello Levoni, who decided to start his business near Milan following the ancient art of artisanal butchery. Top quality ingredients, tradition and passion have always been at the heart of Levoni's history since the very beginning. In 1913, after only two years form its establishment, Levoni took part in the Internatioanl Modern Arts&Industry Exhibition in London, where Levoni Salame Ungherese was awarded with the prestigious gold medal. Over a century and four generations later, Levoni is still faithful for those principles that made it possible to achieve such a great result, that can be summerised in "goodness done well". In 1923 the production has been moved to Castellucchio, a village near Mantua, in Lombardy region, where the company grew in size and started to expand its range of traditional Italian salumi.

Carefully selected pork legs, sea salt, time and passion: these are the only ingredients of Galloni Prosciutto di Parma DOP. Galloni premium quality Parma Ham PDO is produced in Langhirano, in the province of Parma, the homeland of this unique Italian delicacy. For the production of its Parma Ham, Fratelli Galloni uses only the traditional processing methods in order to safeguard the high quality of the real Prosciutto di Parma DOP.Â
The pork legs are carefully selected from trusted 100% Italian farms, using only those coming from the heaviest pigs that are best suited to undergo long maturation periods using the minimum amount of salt.
The salting phase is still carried out by hand by Galloni’s Salting Masters. Each leg is carefully assessed to determine its unique characteristics and absorption capacity, in order to use the right amount of salt to ensure a final product with the incredible aroma and mildness that characterise the unmistakable taste of Galloni Parma Ham.
