Mortadella, with its soft, fine texture and the characteristic white cubes of fine lard, is without a doubt one of the most loved deli meats of the Italian culinary tradition. Originated in Bologna, mortadella is a cooked pork meat sausage, produced mixing together lean parts and fat parts and enriched with peppercorns and, in some cases, pistachio.
