Renowned since the 10th century and called “strachin” for a long time because it was made when the cows returned from pasture “stracche” (tired), Taleggio is not only an exceptional tasting cheese but also a superb ingredient in the kitchen. Mauri is world-famous for its Taleggio, which is aged in Pasturo’s natural caves strictly between 2 and 6 °C for at least 45 days.
Taleggio is one of Italy’s most loved cheeses, made from unpasteurised cow milk, with a creamy yet compact texture and a mild, slightly earthy flavour. Taleggio is a washed-rind cheese: during the aging period, the cheese is turned and sponged with brine to favour the growth of the microflora which donated Taleggio the characteristic pinkish colour of the rind and unique aroma.Â
Located in the beautiful Valsassina Valley, in Lombardy region, Mauri has been producing premium quality local cheeses since 1920. All Mauri cheeses, including Gorgonzola DOP and Taleggio DOP, are produced with milk coming exclusively from local farms.The maturation phase of the cheese wheels still takes place in natural caves located on the surrounding mountains to preserve the authentic flavours and aromas of the authentic local chesses.
