"Aria" type '0' flour is made using the best grains carefully selected by Mulino Caputo, with the addition of Pasta Madre (mother sourdough): a natural, inactive dry yeast obtained mixing together water and flour which makes the dough lighter, flavoursome and with a longer shelf life.
Excellent to make highly hydrated, alveolated, light and crunchy dough.
