Tradition caviar comes from the White Sturgeon (Acipenser transmontanus), a species native to the Pacific coasts of North America, from Alaska to Southern California.
White sturgeon is the longest-living sturgeon species (up to one hundred years of age), and its weight can reach more than 800kg. It takes around 15 years in the life cycle of the sturgeons to the eggs to be matured and ready to be extracted.
 
Tradition caviar is characterised by large roe which diameter can vary from 2.8 to 3.2 millimeter, while the colour of the eggs can range from dark grey shades to black. 
 
Balanced and elegant, with a compact and light texture, White sturgeon caviar is incredibly delicate and round on the palate, with light notes of sea. 
Perfect enjoyed as it is, paired with a glass of dry sparkling wine with fine perlage.
