Traditional Italian Tiramisu'
with Matilde Vicenzi ladyfingers
Originating from Treviso, in Veneto region, Tiramisu' is one of the most popular and loved traditional Italian desserts. 
The name Tiramisu' comes from the regional dialect and literally means "pick me up".
Extremely easy and quick to make, the key to prepare an indulgent and irresistible Tiramisu' lays in the quality of the ingredients, from savoiardi biscuits to cocoa powder.

Ingredients
  • 400g Matilde Vicenzi ladyfingers
  • 400g mascarpone cheese
  • 4 eggs
  • 100g sugar
  • 2 cups of strong coffee
  • 30g cocoa powder
  • 3 tablespoons of sweet Marsala (optional)
Method
Separate the egg yolks from the egg whites. 

Whisk the egg yolks with the sugar until pale in colour and creamy.

Add the mascarpone to the egg yolks mixture one spoonful at a time. Whisk until the cream becomes thicker. 

In a separate bowl, whisk the egg whites until light and foamy and start to form soft peaks.

Delicately add the mascarpone and egg yolk mixture, folding it carefully in the egg whites foam.

In a flat service dish, start placing an even layer of mascarpone cream. 

Pour the coffee at room temperature into a shallow bowl and soak each ladyfinger biscuit for a few seconds on both sides. Make sure that the spongy biscuits don't become too soggy. 

Place the coffee-soaked ladyfingers in the dish on top of the mascarpone layer, until covered. 

Continue by adding a layer of mascarpone cream on top of the ladyfingers. Alternate the biscuits and cream layers until full.

Finish with a layer of mascarpone cream sprinkled with cocoa powder. 

Cover with cling film and place in the fridge.

Serve chilled and enjoy!
