Made with Italian cows' milk cheese, similar to mozzarella, Scamorza can be substituted for mozzarella with the resulting taste being much stronger and more dominant. It is reputed to melt better in baking. Using the smoked variety (affumicata) adds a nice background flavour in replacement.
