After aging for a year and a half in the Valcasotto natural caves, the cheese is covered in chestnut leaves that donate this cheese a distinctive earthy and slightly nutty aroma. The paste is hard and compact, slightly crumby, yet creamy in the mouth. Occelli in chestnut leave pairs perfectly with the traditional full-bodied red wines from the Langhe area, like Barbaresco and Barolo, and dark craft beers.Â
