Now led by the second and third generation, the company still produces premium quality Prosciutto di Parma DOP following the ancient techniques and know-how handed down from generation to generation. The result is a unique product, highest expression of the Made in Italy worldwide, appreciated for its unmistakable mild and balanced taste.

Made by hand, like in the past

Carefully selected pork legs, sea salt, time and passion: these are the only ingredients of Galloni Prosciutto di Parma DOP. Galloni premium quality Parma Ham PDO is produced in Langhirano, in the province of Parma, the homeland of this unique Italian delicacy. For the production of its Parma Ham, Fratelli Galloni uses only the traditional processing methods in order to safeguard the high quality of the real Prosciutto di Parma DOP. 
The pork legs are carefully selected from trusted 100% Italian farms, using only those coming from the heaviest pigs that are best suited to undergo long maturation periods using the minimum amount of salt.
The salting phase is still carried out by hand by Galloni’s Salting Masters. Each leg is carefully assessed to determine its unique characteristics and absorption capacity, in order to use the right amount of salt to ensure a final product with the incredible aroma and mildness that characterise the unmistakable taste of Galloni Parma Ham.

Quality takes time

Galloni prosciutto is matured slowly, following the rhythm of nature. All the cellars are built according to the traditional architectural models of the ancient ham seasoning rooms. The large windows are still opened and closed manually to adjust the amount of sunlight, humidity and breeze coming from the surrounding hills. The fine balance between these natural elements makes it possible for the yeasts responsible for the aromas and flavours of the hams to develop. The result is a prosciutto with a unique and distinctive sweetness, appreciated all over the world by chefs and food lovers.

Fratelli Galloni has been awarded 'Best Italian Prosciuttificio' 2023 by the 'Guida Salumi d'Italia', a prestigious guide published by Maretti Editore which selects every year those cured meat products and companies that represent the highest expression of the Made in Italy.
This award celebrates Galloni's values and hard work, where premium quality and tradition are always at the heart of the company's values. 

In addition to this award, Galloni Barrique ham, a unique Prociutto di Parma DOP aged in oak wine barrels, has received the 'Five Pins', the guide's most prestigious product recognition.
